Local egg farmers are exploring niche markets as egg prices surge. When Charlie Pendorf and Ryan Ludemann started the Hydro Farm in Churchville, Maryland, they needed birds to register as a farm. That is how they got into the egg business. Today, besides egg production, Hydro Farm sells bird breeds, firewood, hydro plants and flowers. They also educate teenagers from local schools. Pendorf and Ludemann discuss their concerns and thoughts as small agricultural producers.
